Vegan Thai Pizza

Ingredient Notes
Here are the ingredients you’ll need for the pizza dough.

- Water – You need to make sure your water is warm, but not hot. Warm water activates the yeast, but hot water will kill it.
- Yeast – I use instant yeast. I prefer to use a packet, but if you have a container of yeast you can use 2 1/4 teaspoons of it.
Here are the toppings and ingredients you’ll need for the pizza sauce.

- Peanut butter – My favorite peanut butter to use for this recipe is the Kirkland brand from Costco. Any creamy peanut butter should work though.
- Carrots – I like to buy whole carrots and slice them, but you can cut up baby carrots or use carrot chips or matchstick carrots instead.
- Lime juice – The lime juice really brightens up the sauce and makes it not taste like it’s straight peanut butter.
Step by step instructions
Step 1 – Start by making your pizza dough in a large bowl. Mix together yeast, sugar, and warm water. Let it sit for about 2 minutes until the yeast is coming to the top and it looks like it’s bubbling a little.

Step 2 – Add in your salt, olive oil, and flour. Mix together. Cover and let it rise for about an hour. The pizza dough should double in size.

Step 3 – While the dough is rising, chop your cauliflower, carrots, garlic, and green onions. Grate the ginger.

Step 4 – In a small bowl add peanut butter, soy sauce, sesame oil, sriracha, garlic, ginger, water, brown sugar, and lime juice. Mix together with a fork or whisk.

Step 5 – Preheat oven to 400 degrees. In another small bowl, mix together your cauliflower and 1/4 cup of the sauce.

Step 6 – Bake the cauliflower in the oven for 20 minutes.
Step 7 – While the cauliflower is baking, roll out your pizza dough.

Step 8 – Spread your sauce evenly on the pizza dough, add the carrots, and add the cauliflower when it’s done baking.

Step 9 – Set your oven to 375. Bake your pizza for 27 minutes.
Step 10 – Take your pizza out of the oven top it with green onion to serve.
Tips and Tricks

- This recipe makes the pizza with a thick dough. If you want thin or medium thickness, use less of the dough. You can do 1/2-3/4 of the dough recipe to make it a thinner pizza crust. I make it on a 14″ pizza pan. Using a bigger pan will also make it thinner.
- If you don’t want to chop carrots, you can save some time by using carrot chips or matchstick carrots. The carrot chips are thick and won’t get super soft though.
- You can make the pizza more or less spicy by changing the amount or sriracha you put in the sauce. Try it before putting it on the pizza to see if you like the spice level.
- If you want tofu on your pizza, you can use less of the cauliflower and carrots. Substitute the same amount for the tofu.
